LI Black Bean Burger

2 cans black beans, rinsed anddrained (if you want to can also soak dried beans overnight and then cook anddrain, use 2 cups and save the rest for a salad!)
1 onion, minced
3 garlic cloves, minced
2 carrots, shredded
1/2 cup quick oats or 1 egg(depending on your diet)
1 Tbsp. olive oil
1 tsp cumin

a few leaves of chopped parsley
1/2 tsp chili powder
1/8 tsp cayenne pepper (you can use red pepper flakes as a substitute)

1 Tbsp soy sauce (optional)
Salt and pepperto taste (if adding soy sauce you don't need salt)
Buns (feel free to use vegan buns)


Heat one tablespoon of olive oil in a pan. Add onions, garlic, salt, and pepper and cook until onions are translucent. Add carrots, cumin, chili powder, and cayenne pepper until carrots are tender. Then set aside.  In a bowl,mash the beans and then add the above from pan,  the soy sauce and quick oats or egg. Mix and form four patties. Place in freezer for 30 minutes to set. Then cook patties in a pan over medium heat, flipping halfway. Enjoy!
