Wild Rice Salad

Yields

for six as a side dish

Ingredients

1 cup black wild rice

1 cucumber

1 red pepper

1/2 red onion

1 tomato

2 lemons

olive oil to your liking

1/2 to 1 tbs cumin (to your liking) 

Directions

Cook one cup black wild rice (follow cooking instruction on rice package)

While rice is cooking - cube one tomato, one cucumber, half red onion, and one red pepper. Place everything in a bowl and add the juice of two lemons, olive oil (to your liking) and cumin 1/2 -1 teaspoon (to your liking)

Once rice is cooked, cool rice for a few minutes and then toss in bowl with the rest of the ingredients

Place in fridge for about 2 hrs and serve.
